🌿 Poem for the Spaghetti of Health
No need for salt,
when the scent of basil
fills the room.

A drizzle of oil,
the red of tomato,
a green that tastes of field.

And the pasta, al dente,
that gathers the heart
of the cook
and offers it to those sitting nearby.

Aromas “YES”… Salt “NO”

Ingredients (serves 4)

  • 400 g (14 oz) De Cecco spaghetti
  • 200 g (7 oz) cherry tomatoes (halved)
  • 1 small rib of celery
  • 1 carrot (cut into thin strips)
  • 2 slices of onion
  • 1 sprig of basil
  • A few parsley leaves
  • A few rosemary needles
  • 1 garlic clove, unpeeled
  • A few thyme leaves
  • 3 tbsp high-quality extra virgin olive oil
  • 2 ladles of water
  • Chili pepper to taste
  • 80 g (3 oz) Parmesan (or to taste)

Preparation

  1. In a large skillet, pour the olive oil and the two ladles of water.
  2. Add all the herbs and vegetables (tomatoes, celery, carrot, onion, basil, parsley, rosemary, garlic, thyme, chili pepper).
  3. Let them cook over medium heat for about 8 minutes, until the aromas are released.
  4. Meanwhile, cook the spaghetti in plenty of unsalted water.
  5. Drain the pasta al dente and toss it directly into the skillet with the seasoning.
  6. Add the Parmesan, stir well, and serve immediately.

No salt: the flavor comes from the fresh herbs, vegetables, and Parmesan.
