Ferratelle from Abruzzo

Ingredients for the Ferratelle:
2 eggs, 2 tablespoons of extra virgin olive oil, 2 tablespoons of sugar, ½ packet of baking powder, 1 packet of vanilla sugar, ½ grated lemon peel, 2 tablespoons of all-purpose flour (type 00).

For the filling:
200 g of very fresh ricotta, 2 tablespoons of sugar, 1 egg, 1 packet of saffron from Navelli or Vallelonga, 1 small glass of Corfinio Barattucci liqueur.
Mix everything well and keep it refrigerated.

For the garnish:
Strawberries or mixed berries, powdered sugar, whipped cream, and a sugar syrup flavored with orange peel.

Preparation:
Keep in mind that one egg makes about 5 pizzelle (depending on the size of the special iron).
Beat the eggs and sugar until light and fluffy. Gradually add the flour, grated lemon peel, baking powder, vanilla sugar, and finally the olive oil. The batter should be smooth and homogeneous.
Heat the special ferratelle iron well and grease it lightly with lard or oil. Pour a ladleful of batter onto the open plate, close it, and cook over the flame. In just a few minutes, the pizzella will be ready. When you open the iron, it will detach easily using the tip of a knife.

The pizzelle can be filled in various ways. Spread a generous spoonful of filling on one pizzella and place another one on top. Arrange on a plate, add a rosette of whipped cream, and place an open strawberry on top. Pour a spoonful of orange syrup over and around the pizzella, decorate with mixed berries, and dust with powdered sugar.
